Summer grilling is still upon us – why not grill the beautiful bounty from the farm stands and turn them into a quick appetizer, side-dish or Meatless Meal? Eggplants and peaches are absolutely perfect right now…here is a simple way to turn them into a delish dish!
Grilled Eggplant & Peach Caprese
1-2 ripe peaches
extra virgin olive oil
salt & fresh ground pepper
feta cheese crumbles
Partially peel the eggplant and brush with extra virgin olive oil; season with salt and fresh ground pepper. Heat a grill pan on medium-high heat and grill eggplant on each side 2-3 minutes; remove from pan. Slice the peaches into rounds – going around the pit on all sides. Place on hot grill pan and grill a minute on each side. Alternately layer the eggplant slices and peach slices on a round dish. Top with feta cheese crumbles and a drizzle of balsamic glaze; add cilantro garnish if desired. Serve hot or at room temperature. Makes 2-4 servings.
