Quick Night Baked Chicken Thighs


A few weeks ago I told you about one of my easy ‘go to’ dinners which led to my Egg White Frittata. Well this dinner doesn’t lead to any other meals, but it is super easy and super delicious for an I’m just too tired to cook night. Four ingredients, (not including salt & pepper), a 350° oven and 55 minutes.

Quick Night Baked Chicken Thighs
2-4 bone in skin on chicken thighs
2-4 slices sourdough bread
1/2 cup chicken stock
2-4 Tbs flavored butter (Chef Shamy) is what I use and it’s a Great Cheat for dinner.
salt & pepper

Heat oven to 350°F. Place the slices of bread in a cast iron skillet. Top each piece with a chicken thigh. Top each thigh with a tab of the butter and a liberal amount of salt & pepper. Add the chicken stock around the pan. Cook for 50 minutes. Done! Tender and Delicious!
