
My daughter-in-law Omaira loves to cook…and she loves presentation…everything I have seen her make ends up looking like a masterpiece, almost too beautiful to eat! During their recent visit she wanted to make us these very healthy and very delicious Oat, Banana & Yogurt Pancakes!

Omaira’s Oat, Banana & Yogurt Pancakes
1/3 cup oats
1/2 banana
1/4 cup Greek Yogurt (plain, vanilla or banana)
1/2 tablespoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 egg
1/2 tablespoon honey (+ more for serving)
This recipe is for three small pancakes per person. Omaira recommends making each person’s pancakes one at a time – so double or triple the recipe depending on how many people you’re serving. In a blender, combine the oats, banana, yogurt, vanilla, baking powder, cinnamon, nutmeg, egg and honey. Blend 35-40 seconds to create a smooth mix. Pour into a skillet that has been sprayed with a little cooking oil. Cook 2-3 minutes on each side on medium-low heat (cook it low and slow!) Top with a drizzle of honey and some more sliced banana. Delicious and Healthy!
