Bananas Foster French Toast

It’s been a while since I had some French Toast…it used to be one of my favorite weekend breakfast meals – soft boiled eggs have become a staple in my morning routine instead. Well I had a craving for something a little decadent so I whipped up a batch of these delicious French Toast and added Bananas Foster on top as a special treat!

Spinach, Mushroom & Cheese Egg White Frittata

All of us I’m sure have the Go-To dinners when you just don’t want to fuss in the kitchen. One of my Go-To favorites is Pasta Carbonara. As easy as separating a bunch of eggs and boiling some pasta. Well, now on the following day for lunch I make an Egg White Frittata with whatever I have in the refrigerator. It’s my favorite way to use up all the unused egg whites and whatever cooked veggies I have as leftovers. Plus my Hubby will eat it again for breakfast the next morning! Win, Win, Win! Egg Fried Rice with Ginger, Sriracha Mayo

During this time of isolation I’ve been working on a house to flip. I have an Interior Design background and since it’s not my nature to just sit at home, I bought a house to keep me busy. And busy it’s been. We closed April 30th and I have about a week still of work until it’s done completely. That being said, some nights when I get home I really don’t want to cook. Solution, order out… anyway, we ordered from our local Chinese Restaurant and as per normal there was a lot of leftover white rice. So for lunch the next day I made this… It was delicious! My Favorite Holiday Bites

Thanksgiving is over and we spent ours with some of our children. My daughter-in-law made dinner this year, so I was off the hook! It was a wonderful day and everything was delicious! The only thing was that I missed some of my favorite bites. I still had a turkey at home to cook and I had been dying to try a technique I had heard about to see if it worked. Since I was clear of the pressure to serve it to anyone but my Hubby and I, I decided to go for it on Sunday. To my happy surprise it worked perfectly and I will never make a turkey any other way again! I also made the two sides that I was missing from other Thanksgivings. The Cranberry & Apricot Chutney I cook at Thanksgiving but use it for many Holiday dishes all the way to Christmas and as a gift to Hostesses when I attend parties. It’s great on Brie too! Focaccia Art

My kids came home to visit this weekend and my son Dillon wanted to make something with me. I know this Focaccia Art is trending, so I suggested we try to make some ourselves. I took a shortcut on the dough and pulled most of the herbs out of my garden so it was simple and fun, not to mention delicious! Continue reading

Green Veggies with Poached Egg

This recipe came about from having a bounty of veggies that needed to be used up before they went bad….you know how that goes, you buy the ingredients to make something and it doesn’t get made…then you don’t feel like making it anymore and you come up with something else completely different…I liked the idea of Heidi’s Shakshouka but didn’t have any tomatoes so instead I put all my green veggies to good use…stay safe everyone…
