All of us I’m sure have the Go-To dinners when you just don’t want to fuss in the kitchen. One of my Go-To favorites is Pasta Carbonara. As easy as separating a bunch of eggs and boiling some pasta. Well, now on the following day for lunch I make an Egg White Frittata with whatever I have in the refrigerator. It’s my favorite way to use up all the unused egg whites and whatever cooked veggies I have as leftovers. Plus my Hubby will eat it again for breakfast the next morning! Win, Win, Win! During this time of isolation I’ve been working on a house to flip. I have an Interior Design background and since it’s not my nature to just sit at home, I bought a house to keep me busy. And busy it’s been. We closed April 30th and I have about a week still of work until it’s done completely. That being said, some nights when I get home I really don’t want to cook. Solution, order out… anyway, we ordered from our local Chinese Restaurant and as per normal there was a lot of leftover white rice. So for lunch the next day I made this… It was delicious! Thanksgiving is over and we spent ours with some of our children. My daughter-in-law made dinner this year, so I was off the hook! It was a wonderful day and everything was delicious! The only thing was that I missed some of my favorite bites. I still had a turkey at home to cook and I had been dying to try a technique I had heard about to see if it worked. Since I was clear of the pressure to serve it to anyone but my Hubby and I, I decided to go for it on Sunday. To my happy surprise it worked perfectly and I will never make a turkey any other way again! I also made the two sides that I was missing from other Thanksgivings. The Cranberry & Apricot Chutney I cook at Thanksgiving but use it for many Holiday dishes all the way to Christmas and as a gift to Hostesses when I attend parties. It’s great on Brie too! My garden has started producing zucchini, zucchini and more zucchini. I love to use my julienne peeling tool to make angel hair like zootles, but sometimes something other than zootles in nice.
