My niece Michelle asked for this recipe recently so I decided to share it on today’s post…Michelle – here it is! Love you girl…
This crispy sweet raspberry dessert is absolutely delicious!
2 sticks room temperature butter
1 cup sugar
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon salt
1 cup seedless raspberry jam
1/2 cup vanilla granola crumbles
1/2 cup almonds
Heat oven to 350°F. In a large mixing bowl combine the butter, sugar & vanilla extract. Using an electric mixer blend until smooth. Sift in the flour & salt and blend until a dough forms. Press the dough into a shallow rectangular dish that’s been greased with a little butter. Spread with the raspberry jam. Sprinkle evenly with both vanilla granola crumbles and almonds. Bake ~30-40 minutes until lightly browned. Cut into squares. Eat alone or with a scoop of ice cream. Delicious!
