Philly Cheese Steak Deep Dish Pizza, 80’s Style

I wanted to make this cheese steak pizza because I see people making them but not the way I remember eating them when I lived in Philly in the late 80’s and early 90’s. Although controversial among cheese steak ‘purists’, this is how I loved them when I lived there. So I decided to make the pizza my way… enter… ‘Processed Cheese!’ After the pizza came out of the oven a lovely layer of melted processed cheese was poured all over this beautiful deep dish and I was transformed to 1989 all over again… Now that’s what I’m talking about!

Philly Cheese Steak Deep Dish Pizza
1 package shaved steak
8 slices Provolone cheese
1/2 large onion sliced thinly
1 green pepper sliced thinly
1/2 cup sliced mushrooms
1 loaf raw frozen bread dough thawed and left to rise or store bought pizza dough
2 Tbs Mayonnaise
1 tsp onion powder
1 tsp garlic salt
1/2 cup Velveeta
1 slice American cheese
1 Tbs milk + more if needed
salt & pepper
1 scallion diced for garnish

Heat oven to 475°F. Sauté the onions, peppers and mushrooms until they become almost soft. Set them aside. In the same skillet cook the shaved meat salting liberally. Add some cracked black pepper and remove from heat. Spray the inside of a cast iron skillet. Stretch the dough to fill the pan. First spread on the mayonnaise then add three of the Provolone slices. Next add as much of the cooked steak as you want, ( I used a little over a half of the meat). Now add half of the onion powder and half of the garlic salt to the meat. Layer the remaining Provolone and then the veggies. Cook for 18 to 20 minutes. While the pizza is cooking, place the processed cheese, American cheese, milk and the rest of the onion powder & garlic salt. Microwave in 30 second increments stirring each time until the mixture becomes a sauce consistency, (this is where you add more milk if you need it). When the pizza comes out of the oven pour the cheese sauce all over and top with some sliced scallions for garnish. Delicious!
