So my Hubby is a CPA and this time of year his firm is hopping with tax returns! During this season I always make lunch on Fridays for the wonderful people who work with and for him. Last Friday I made little sandwiches filled with a version of Waldorf Salad. Since all the girls wanted the recipe, I decided to blog it for them. I did end up using an ingredient I had never used before. Needing to make 20 of these little gems and finding that one whole rotisserie chicken wasn’t enough I went to my Covid cupboard and pulled out some canned chicken I had purchased at Sam’s Club. I was hesitant to use them since I have never used canned chicken before, but was surprised how well they enhanced and stretched the salad. I love happy accidents! Continue reading

Philly Cheese Steak Deep Dish Pizza, 80’s Style
I wanted to make this cheese steak pizza because I see people making them but not the way I remember eating them when I lived in Philly in the late 80’s and early 90’s. Although controversial among cheese steak ‘purists’, this is how I loved them when I lived there. So I decided to make the pizza my way… enter… ‘Processed Cheese!’ After the pizza came out of the oven a lovely layer of melted processed cheese was poured all over this beautiful deep dish and I was transformed to 1989 all over again… Now that’s what I’m talking about! During this time of isolation I’ve been working on a house to flip. I have an Interior Design background and since it’s not my nature to just sit at home, I bought a house to keep me busy. And busy it’s been. We closed April 30th and I have about a week still of work until it’s done completely. That being said, some nights when I get home I really don’t want to cook. Sweet Potato Fries With Swiss & Gruyère
While we are all being ‘Alone Together’, I find I am really missing some of my favorite restaurants and foods they made. One of the things I miss is sweet potato fries. While I don’t fry at home, I decided to make them my healthy baked way. Coating the fries in egg whites gives them the crunchy outside without the fat. Then topping them with a lovely sauce of cheese didn’t make me feel so bad. They were really delicious! Continue reading
Pub Burgers with Bacon Jam
I had these super tasty burgers at the Iron Pier Craft House – a Gastropub in Cape May, NJ – with outdoor seating overlooking the Atlantic Ocean – a little too chilly on these December days but a great restaurant to visit in season. When making these burgers at home I added additional flavor in the meat with a bit of Brazilian Steakhouse seasoning and created my own Bacon Jam…I also substituted Havarti cheese…end result – Delicious! Smoked Mozzarella, Grilled Asparagus & Tomato Flatbread
Today’s Flatbread is so easy and delicious! I grilled the asparagus and tomatoes and used fresh smoked mozzarella and shredded parmesan to add a nice flavor to the flatbreads then popped them into the oven until the cheese melts…so good…

Beef & Lamb Gyros Salad With Grilled Red Onions, Goat Cheese & Tzatziki Dressing
I love a good Gyro and when I found the gyro meat package at Sam’s Club I was all in! Wanting to make it a little lighter than the wrap, I opted for a salad instead. I also swapped out the tomatoes for roasted red peppers because it’s hard to get a good tomato this time of year and truth be told I’m kind of a tomato snob…Well, it was everything I could have wanted in a great Gyro without the bread… Delicious!
