Today’s Flatbread is so easy and delicious! I grilled the asparagus and tomatoes and used fresh smoked mozzarella and shredded parmesan to add a nice flavor to the flatbreads then popped them into the oven until the cheese melts…so good…

Smoked Mozzarella, Grilled Asparagus & Tomato Flatbread
10 asparagus spears, trimmed
2 plum tomatoes
extra virgin olive oil
salt & fresh ground pepper
8 slices smoked mozzarella
1/4 cup freshly shredded Parmesan cheese
Heat oven to 450°F. Heat a grill pan on high heat. Brush the asparagus with a little extra virgin olive oil and season with salt and fresh ground pepper; place on grill pan. Cut plum tomatoes into thick slices; place on grill pan. Grill asparagus and tomatoes ~10 minutes. Meanwhile, brush the flatbread with a little extra virgin olive oil. Layer four slices of smoked mozzarella on each flatbread. Cut grilled asparagus into bite-sized pieces and distribute asparagus and tomato slices between both flatbread; top with shredded Parmesan. Bake in the heated oven 5-7 minutes until cheese melts. Remove from oven and eat…
