First salad of the summer had to include delicious ripe stone fruits! I grilled the fruit and assembled this for lunch today – topping the salad with a yummy Raspberry Vinaigrette…Don’t forget to check out our Fabulous Fare Sisters Cookbook!
Summer Salad with Grilled Stone Fruits
1 head Boston lettuce
1 plum, sliced
1 nectarine, sliced
1 white peach, sliced
handful roasted almonds
handful fresh feta cheese crumbles
Marie’s Raspberry Vinaigrette
Clean the lettuce and arrange on a platter. Grill the slices of plum, nectarine & white peaches until nicely charred. Arrange grilled stone fruits on Boston lettuce. Add the roasted almonds and fresh feta cheese crumbles. Toss with the Raspberry Vinaigrette. Dig in!
