This is another variation of my sister Bethann’s Vidalia Onion Dip recipe that Heidi and I have been making for many years. For this recipe I’ve sautéed the sweet onions about twenty minutes to caramelize them – adding a sweet depth to the dip. My favorite crackers to spread this delicious dip on are Breton Crackers…ENJOY!
Sweet Onion & Swiss Cheese Dip
1/2 cup mayonnaise
1 1/2 cups shredded Swiss cheese
1 1/2 cups diced sweet onion
extra virgin olive oil
Heat oven to 400°F. Sauté the diced onions in a tablespoon of extra virgin olive oil in a skillet on medium heat for about twenty minutes to caramelize them. Place cooked onions in a medium bowl; mix in the mayonnaise and the Swiss cheese. Spread into a baking dish and bake 20-25 minutes until lightly browned and bubbly! Remove from heat and serve with Breton Crackers or sliced Italian bread.
