Pub Burgers with Bacon Jam

I had these super tasty burgers at the Iron Pier Craft House – a Gastropub in Cape May, NJ – with outdoor seating overlooking the Atlantic Ocean – a little too chilly on these December days but a great restaurant to visit in season. When making these burgers at home I added additional flavor in the meat with a bit of Brazilian Steakhouse seasoning and created my own Bacon Jam…I also substituted Havarti cheese…end result – Delicious!

Pub Burgers with Bacon Jam
1 1/4 lbs lean ground beef
2 tablespoons McCormick Grill Mates Brazilian Steakhouse Seasoning
6 bacon slices
1 Vidalia onion, diced
2 garlic cloves, minced
3 tablespoons brown sugar
2 tablespoons white vinegar
1 tablespoon pure maple syrup
1/4 cup beef broth
Havarti cheese, sliced
fresh sliced ripe tomatoes
Romaine lettuce leaves
4 fresh Brioche buns

Pub Sauce
3 tablespoons mayonnaise
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon Brown sugar
1/2 tablespoon snipped fresh chives

About an hour before serving or early in the day, in a large mixing bowl, combine the lean ground beef with the Brazilian Steakhouse seasoning. Shape into burgers and refrigerate until ready to cook. Cook bacon until crisp in a large skillet; remove and reserve. Drain the bacon drippings; reserve. Wipe the skillet clean with a paper towel. Pour 1-2 tablespoons of the reserved bacon drippings back into the skillet; add the diced Vidalia onion and sauté on medium-low heat for 20 minutes; stirring occasionally. Add the minced garlic and sauté another minute or two. Stir in the brown sugar, white vinegar, pure maple syrup and beef broth. Add in the reserved cooked bacon. Bring to a soft boil; reduce heat to low and simmer ~15 minutes until liquid evaporates. Meanwhile, cook the burgers to desired doneness; adding the Havarti cheese slices to the tops of the burgers the last two minutes of cooking – allow to melt. Make the Pub Sauce: whisk the mayonnaise, Worcestershire sauce, soy sauce, brown sugar and chives until combined. To assemble: Slather some Pub Sauce on the bottom of each Brioche bun; layer with lettuce, tomato slices, cooked burgers with melted cheese and top with a scoop or two of Bacon Jam. Place on the top bun and serve immediately. Makes 4 burgers.
