
I recently taught a cooking class online using Zoom for a group of women….I had never done this before and I was a little bit nervous…but turns out once everyone showed up it was so much fun and I had a blast! I decided to share a recipe that was very easy…Penne Pesto…one of my go-to’s when the family is very hungry and dinner has to be ready in under 30 (actually 20!) minutes…
Penne Pesto
16 oz box Penne Pasta (use half)
2 cups fresh basil leaves
2-3 cloves garlic, chopped
2 heaping tablespoons pine nuts
1/2 cup extra virgin olive oil
1/4 cup freshly grated Pecorino Romano or Parmigiano Reggiano
Salt and freshly ground black pepper
Cook the Penne as package directs (I use only half the box for this recipe). Combine the basil, garlic & pine nuts in the bowl of a food processor and process until coarsely chopped. With the motor running, slowly add the oil and process until smooth. Add the cheese, salt and pepper and pulse a few times to combine. Drain the pasta and toss with the pesto. Plate and serve with a little more grated cheese on top.

Pesto! I am sadly out of all the pesto I put in the freezer for the winter, but I do have a market that carries a lot of the fresh. This is a perfect dish, simple, but so very delicious and satisfying!

Pesto is one of my go to recipes. In the summer I like to add roasted cherry tomatoes and serve at room temperature.
