Rotini Romesco

Romesco Sauce is a blend of toasted almonds, roasted red pepper and other yummy ingredients. In the past I’ve only ever served it over chicken thighs…today I decided to change it up a bit and serve it over Rotini pasta. It’s a rich nutty sauce that fills all the nooks and crannies of Rotini! So, so good… Continue reading

Busiate con Zucca & Salsiccia

During our recent visit to NYC, Heidi and I visited Eataly on 5th Avenue to peruse their Italian goods. We both picked up this Busiate pasta and made a plan to each make something different with it…so, for today’s meal I roasted some butternut squash (Zucca) and cooked up some mild Italian sausage (Salsiccia) seasoned with a touch of nutmeg …added a white wine-cream sauce and voilà! A star was born… Continue reading

Italian Pasta Salad

Italian Pasta Salad
My son graduated and we threw a huge party this weekend. It was so hot and everyone was going to be in and around the pool. Red Lentil Pasta with Brie & Toasted Pine Nuts

It’s the perfect mid-week meal that’s both hearty and tasty…Nutritionally, this red lentil bean-based pasta has a single ingredient (organic red lentil flour), and is packed with 13 grams of protein in every serving. Heidi turned me on to this pasta and I’m now a convert…with a perfect al-dente bite, it pairs well with any sauce thrown its way! Continue reading

Tortellini with Prosciutto & Peas

The story goes that a beautiful woman stayed at an Inn in a small town in the Providence of Modena. The Innkeeper was so captivated by her beauty that during the night he peeked through the keyhole to her room and saw only her navel…inspiring him to create this noodle. Crazy story! Anyway, whoever created it – it’s a very tasty pasta, especially when paired with prosciutto, peas, cream & cheese… Continue reading
