Here we are… Together Alone… Lot’s of time to cook, cook, cook! For lunch I decided to use some frozen spinach to make my quiche. I usually use fresh but desperate times and all. To my pleasure I found it even better!
Spinach & Cheddar Quiche
1 frozen pie crust
3 eggs
3/4 cup heavy cream
1 frozen bag of spinach thawed
3/4 cup cheddar cheese grated
salt & pepper
1/2 onion diced fine
2 Tbs butter
Preheat oven to 375°F. In a skillet melt the butter and sauté the onions. Add the spinach, salt & pepper and cook together for about 8 to 10 minutes to cook out most of the spinach extra moisture. Remove from the heat and allow to cool. In a mixing bowl whisk the eggs, cream and cheddar. When the spinach mixture cools a bit fold the spinach in. Spoon into the pie crust and bake for 35 minutes. Allow to cool for about 5 minutes before you cut into it. Serves 4 people.
