All of us I’m sure have the Go-To dinners when you just don’t want to fuss in the kitchen. One of my Go-To favorites is Pasta Carbonara. As easy as separating a bunch of eggs and boiling some pasta. Well, now on the following day for lunch I make an Egg White Frittata with whatever I have in the refrigerator. It’s my favorite way to use up all the unused egg whites and whatever cooked veggies I have as leftovers. Plus my Hubby will eat it again for breakfast the next morning! Win, Win, Win! Spinach & Cheddar Quiche
Here we are… Together Alone… Lot’s of time to cook, cook, cook! For lunch I decided to use some frozen spinach to make my quiche. I usually use fresh but desperate times and all. To my pleasure I found it even better! Continue reading
Spinach & Chicken BBQ Pizza
This pizza is so good… Rich with the buttery caramelized onions on top, you just can’t wait to take another bite. And I never get tired of Spinach or BBQ. My Hubby and I devoured almost the whole thing! This is one I will definitely be making again. Continue reading
Green Veggies with Poached Egg
This recipe came about from having a bounty of veggies that needed to be used up before they went bad….you know how that goes, you buy the ingredients to make something and it doesn’t get made…then you don’t feel like making it anymore and you come up with something else completely different…I liked the idea of Heidi’s Shakshouka but didn’t have any tomatoes so instead I put all my green veggies to good use…stay safe everyone…

Spinach, Burrata & Crispy Prosciutto Salad
I assemble this quick salad when I need to serve a tasty & effortless lunch. The crispy prosciutto adds just the right amount of salty flavor that compliments the creamy burrata. I use Roma tomatoes in the winter when fresh Jersey tomatoes are not in season. Ciabatta or Italian bread cubes toast quickly in the oven and the dressing is a breeze to make. All in all a healthy addition to the salad rotation! Continue reading
Open Faced Veggie Sandwich With Gruyere
I find mushrooms very gratifying. ‘Paris’ mushrooms or as most call them ‘Button’ mushrooms are one of my favorites. This open faced sandwich is great for a Meatless Meal or even an elegant appetizer if served on a little round bread bite. Continue reading
Homemade Ricotta, Spinach and Shrimp Pizza With A Tarragon Lemon Aioli
Whoops! I scheduled this to post last week by accident – so here it is again! 🙂
Do you ever have those days where it’s time to figure out lunch and when you look in the refrigerator all you have are lots of little containers of leftovers? Well, that is how this pizza came about. My Hubby loved it so much that he requested it again. This time I decided to share it with all of you. Continue reading
Spinach Lasagna Roll Ups
Who doesn’t love lasagna. I find this easy roll up version to be great for entertaining due to the perfect individual sizes. It also becomes great for changing the inside flavors. For instance along with the spinach version I made a turkey sausage version. The possibilities are endless so I suggest you roll with it… Hahaha! Continue reading
Turkey Spinach & Mushroom Tetrazzini

One of my favorite things about Thanksgiving is using up the leftovers. I don’t know why I wait all year to make Tetrazzini but every year that’s what happens. It’s just one of those comfort foods you think about after Thanksgiving. Well, here’s my version. Continue reading
