This salad is divine! Made almost out of desperation… On Wednesdays my hubby usually has lunch with his business partner and I fully anticipated that, until I got his text while I was on the incline trainer… “Lunch with my princess today”… (the best man ever!)… I had not planned on lunch. This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. Mediterranean Wheat Salad

As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. This particular brand is Kamut – organically grown – with a rich, nutty flavor. Combined with caramelized onions, mushrooms, sun-dried tomatoes and spinach and topped off with feta cheese and pine nuts, it’s an explosion of flavor in every bite! I named this after me… My Hubby calls me Princess, so I always feel like one. Anyway, when Linda and I were growing up our mother used to make chicken a la king. It wasn’t my favorite, but I always loved the Popovers she would make with them.
