Spinach & Chicken BBQ Pizza
This pizza is so good… Rich with the buttery caramelized onions on top, you just can’t wait to take another bite. And I never get tired of Spinach or BBQ. My Hubby and I devoured almost the whole thing! This is one I will definitely be making again.

Spinach & Chicken BBQ Pizza
1 ready-made crust
1 package frozen spinach thawed & drained
1/4 cup cream cheese
1 cup shredded mozzarella
1 chicken breast
1/4 cup BBQ sauce of choice
1/2  tsp cinnamon
1/2 tsp garlic powder
1/2 tsp onion powder
1 onion slice thin
2 Tbs butter

Heat oven to 425°F. In a small bowl mix the BBQ sauce, cinnamon, 1/4 tsp garlic powder and 1/4 tsp onion powder. Heat a grill pan and lightly spray with cooking spray. Cook the chicken breast for about 3 to 4 minutes on each side. Set the chicken aside and allow to rest. Heat the butter in a sauté pan on medium-low and slowly caramelize the onions until they are rich in color and very soft.  Remove the onions from the pan and set aside. In the same pan add the spinach, 1/4 tsp garlic powder and 1/4 tsp onion powder, salt & pepper to taste. Next add the cream cheese and stir until the cheese is melted into the spinach. Place your pizza crust on a cooking sheet and top with the spinach mixture then the mozzarella cheese. Next cut the chicken into bite-sized pieces and dredge though the BBQ sauce. Place the chicken pieces around the pizza evenly. Cook in the oven for 20 to 25 minutes. When the pizza is done drizzle the buttery caramelized onions all over the top. Delicious!
