Homemade Red Beans

I usually buy pre-made beans in cans but recently purchased a few bags of beans…these homemade red beans are full of flavor in a delicious sauce. They take a little time to cook but the end result is so tasty! Better than any canned bean and way healthier…

Homemade Red Beans
1 lb bag dried red beans
water
extra virgin olive oil
1 red onion, diced
4 garlic cloves, sliced
salt, cumin, coriander, chili powder

I quick-soaked the beans before cooking: Heat beans with 6-8 cups of water in a large pot. Bring to a boil – boil 2 minutes; remove from heat, put a lid on the pot and allow to sit for 30 minutes. Drain beans into a colander. In the same pot heat a tablespoon of olive oil. Add the red onion and sauté for 4 minutes; add the garlic and sauté another 2-4 minutes on medium heat. Add the drained red beans and 6 cups of fresh water. Bring to a simmer; add 1 teaspoon each salt, cumin, coriander and chili powder. Put a lid on and gently simmer 1 1/2 hours until beans are tender and flavorful; resisting the urge to over-stir as this may break the beans. This is a great addition to a bowl of rice.
