For this dish I marinate the chicken in a lemongrass mixture and then lightly bread it in Panko crumbs – pop it in the oven and it’s done in a jiffy. Lemon-Garlic Chicken Thighs with Tzatziki Sauce

This is one of those delicious Greek-style dinners that’s sure to please…what’s not to love about juicy chicken thighs marinated in a lemon-garlic sauce? Eggplant & Chicken Tajine

A Tajine is an earthenware pot which is used in many Mediterranean slow-cooked, savory dishes. The Mediterranean diet is touted as a very healthy diet… I try to incorporate this type of meal into our menu at least once a month… slowly introducing the different flavors without too much fanfare…and so far everyone seems to enjoy each dish!
