Nancy & Mark’s Eggplant Parm

We recently had our very good friends’ Nancy & Mark’s Eggplant Parmesan and it was absolutely delicious…so I took a quick pic and finagled the recipe out of them…Nancy remarked “They’re the simplest ingredients!” and as you can see they are the simplest ingredients and by applying your own technique you can master this delicious dish. Use fresh eggplants and cut relatively thin but not so thin they fall apart during baking… Continue reading

Penne with Eggplant & Tomato Sauce

I am cooking a lot more vegetarian dishes than ever before…and loving it! With a growing family, we have so many different dietary requirements and desires. Don’t get me wrong, we still love grilling steaks and barbecuing chicken – but we are developing a new palate in our house. There are so many more flavors out there that we just never considered…like this delicious pasta that I made from the leftover Eggplant & Tomato Soup…so, so good… Continue reading

Eggplant ‘Meat’Balls & Creamy Polenta

These ‘Meat’Balls are so good! I substitute these for beef when I have my vegetarian friends over…using them in sandwiches (think Meatball Subs) and over pasta (think Spaghetti & Meatballs). They’re so full of flavor that they fooled my friends – I personally think they taste way better than beef meatballs! If you haven’t given them a try you definitely should… Continue reading

Classic Moussaka

We are huge fans of Greek food…I make a lot of it at home and we also head over to our favorite Greek spots a few times a month (Estia Taverna and Black Olive)…but had never made Moussaka at home until this past weekend…I didn’t want to follow anyone else’s recipe – I knew the flavors very well since I’ve eaten it many times at restaurants…so I sat down and wrote my ideas out in my cooking notebook…shopped for all the ingredients ….then gave it a whirl on Sunday afternoon. It turned out superb! Definitely restaurant quality (can I toot my own horn and say even better than restaurant quality?!) I roasted the eggplant and baked the layer of potatoes before assembling the remaining layers; bringing out the delicious flavors of both, while the beef simmered in a tomato sauce seasoned with cinnamon, allspice and ginger. The final layer is a custard-like b├ęchamel sauce topped with a mix of shredded cheeses…truly scrumptious! Continue reading

Eggplant Parmesan

Today I’m sharing a Meatless Meal…this is one of my favorites…I get it all the time when I see it on restaurant menus but in all honesty they’re so covered with sauce that it’s sometimes hard to taste the eggplant. When I make it at home I cook it with as little oil as possible and top it with just a smidge of sauce and cheese so the eggplant can shine… Continue reading

Eggplant & Chicken Tajine

A Tajine is an earthenware pot which is used in many Mediterranean slow-cooked, savory dishes. The Mediterranean diet is touted as a very healthy diet… I try to incorporate this type of meal into our menu at least once a month… slowly introducing the different flavors without too much fanfare…and so far everyone seems to enjoy each dish! On today’s menu is an Eggplant & Chicken dish that is so healthy and delicious – if you don’t have a Tajine simply use an oval shallow casserole dish… Continue reading
