It’s been so long since I made these cookies…maybe when the kids were little? When I passed by a bag of butterscotch morsels the other day at the supermarket I immediately had a craving for them…they’re the perfect little dessert…just a small bite of sweetness…mmmm….they taste as good as I remember…
Oatmeal Scotties
1 stick softened butter
1 stick margarine
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla extract
3 cups Old Fashioned Oats
1 bag butterscotch morsels
Heat oven to 350°F. In a large mixing bowl, combine the butter, margarine, sugars and eggs. Using an electric mixer, blend until smooth. Sift in the flour, salt and baking powder. Add the vanilla. Blend until smooth. Add the Old Fashioned Oats and butterscotch chips. Hand mix until combined. Drop by teaspoonfuls on a baking sheet. Bake in heated oven 10-12 minutes or until lightly browned and set. I make one batch at a time and refrigerate the remaining dough.

Lovely recipe Linda – would butter would in place of the margarine – I’m always conscious that the latter isn’t very good for us – worth reading up on if you’re keen to learn more 😊

Thanks Laura…you’re absolutely right about margarine and I hardly ever use it – and when I do, I use margarine with no more than 2 grams of saturated fat and zero trans fat…most of the time I substitute healthier oils for either butter or margarine…but sometimes it’s just tastier to go old-fashioned! 🙂
