Italian Turkey Sheet Pan Meatloaf

Italian Turkey Sheet Pan Meatloaf
The day I learned about sheet pan meatloaf was a Great day! In college I would roast a chicken and make a turkey meatloaf every Sunday. Turn the oven on once and make food for the week. I still love to have meatloaf sandwiches so this sheet pan idea is fantastic. Meatloaf in 20 minutes! You can apply any recipe you have, I just decided to go Italian today.

Italian Turkey Sheet Pan Meatloaf
2 pounds ground turkey (dark meat)
3 slices of bread diced
1/2 cup milk
2 eggs
1/2 (+) cup roasted red peppers chopped
1 cup of diced cooked onions
1 Tbs Italian seasoning
1 tsp oregano
1 cup Pecorino Romano Cheese grated
1 cup chopped pepperoni
2 Tbs tomato paste
2 Tbs ketchup
salt & pepper
2 Tsp garlic salt
pan spray
(More ketchup for top + tomato paste and Worcestershire sauce to top the meatloaf)

Heat oven to 375°F. Mix first the bread and milk so that the bread soaks up all the milk. Next add the eggs and stir until the eggs are incorporated. Add the turkey and the rest of the ingredients. Using your fingers like salad tossers, begin to fold the mixture gently together. Liberally spray a full size sheet pan and press the mixture into the pan from edge to edge. Top with the ketchup mixture and cook for about 20 minutes. After the meat has cooked turn on the broiler for 3 to 5 minutes. Cut and serve. Delicious!

Enjoy!
