I made this sandwich originally with leftovers and my Hubby just loved it, so now I make it on purpose for him sometimes at our daily lunch date. The pork loin is tender and lean and the roasted red peppers give a sweetness while the dijon and arugula give it a nice bite. I just love happy accidents…
Pork Loin Sandwich With Roasted Red Pepper Mayo And Arugula Salad
1 Pork Tenderloin
1 roasted red pepper
1 small clove garlic finely minced
1/2 mayonnaise
1 cup arugula
2 Tbs Dijon dressing (see below)
1 cup shredded Swiss cheese
4 Portuguese rolls
1 Tbs olive oil
salt & pepper
1/4 tsp onion powder
1/4 tsp garlic powder
Dijon Dressing
1 Tbs red wine vinegar
3 Tbs olive oil
2 tsp Dijon mustard
salt & pepper to taste
Heat the oven to 400°. Evenly season the cleaned and trimmed pork tenderloin with salt, pepper, onion powder and garlic powder. Heat the oil in a skillet and sear on all four sides. Continue cooking for about 8 to 12 minuted until the internal temperature reaches 160° for medium. Let rest for 15 to 20 minutes.
In a food processor add the mayonnaise, garlic, red pepper and salt and pepper to taste. Spread the mixture evenly on the rolls. Top each slice of the roll with the Swiss cheese. Very thinly slice the pork and set aside. Place the rolls topped with cheese into the oven and cook until the cheese is melted. In a bowl, make the dressing and toss the arugula. Remove the rolls from the oven, top with thinly sliced pork and the Arugula Salad. Delicious!
