I made this sandwich originally with leftovers and my Hubby just loved it, so now I make it on purpose for him sometimes at our daily lunch date. The pork loin is tender and lean and the roasted red peppers give a sweetness while the dijon and arugula give it a nice bite. I just love happy accidents… Continue reading

Tubettini Pasta With Wilted Arugula, Shrimp & Toasted Garlic: Revisited
My hubby said this is his favorite and I have to agree. He wants me to make it again tonight! The flavors of the creamy pasta with the freshness of the wilted arugula are a perfect compliment to the lightly seasoned and floured shrimp. Tip this baby off with a little crunchy garlic and POW! Smoked Salmon & Roasted Cremini Mushroom Salad

This salad is divine! Made almost out of desperation… On Wednesdays my hubby usually has lunch with his business partner and I fully anticipated that, until I got his text while I was on the incline trainer… “Lunch with my princess today”… (the best man ever!)… I had not planned on lunch. While I jumped off the trainer and Hubby jumped on, I went to work on figuring out lunch. With what I had on hand I made this accidental amazing salad! Really delicious! Continue reading
Toasted Garlic Portabella Mushroom Pasta With Wilted Arugula

After a long weekend away in Richmond, VA there wasn’t much in the refrigerator to make. But with a little ingenuity and some pantry items this pasty was simply delicious. Hubby and I enjoyed devouring this easy pasta dish made with leftover noodles. Continue reading
Homemade Ricotta Ravioli Scampi with Grilled Lemon, Asparagus, Arugula & Toasted Garlic

I recently started making my own ricotta cheese and I just can’t get over how easy it is and how much I love it! So for today’s dish I combined two of my favorite Italian dishes together – ravioli and scampi. Grill a lemon and add a little veggie and you have a wonderful meal. My Hubby enjoyed every delicious bite… Continue reading
Sirloin Steak Panini

Our local pizza & sandwich joint has a very tasty Flank Steak Panini on their menu that I’ve been ordering for years. I finally decided to just make it at home – tweaking it until it was just right. I’ve never been a big fan of flank steaks because they end up being very fatty…so I use sirloin instead, marinating it and grilling it and adding sautéed marinated red onions, sharp cheddar cheese, tomato, arugula and a smear of black pepper aoili…all piled on toasted rustic sourdough bread…This is the perfect pick-me-up when I’m in the mood for a tasty lunch! Pear, Blue Cheese & Candied Pecan Salad

This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. I had to ask the boss to let me have them for a little while…It was a lot of fun and I was thrilled to show them my appreciation for all they do. Continue reading
