Pear, Blue Cheese & Candied Pecan Salad
This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. I had to ask the boss to let me have them for a little while…It was a lot of fun and I was thrilled to show them my appreciation for all they do.

Pear, Blue Cheese & Candied Pecan Salad
1 bunch arugula
1 bunch baby spinach
1/2 cup blue cheese crumbled
1/2 cup candied pecans
1-2 Pears depending on how many salads you are making
juice from 1/2 a  lime

Dressing
1/2 cup olive oil
3 Tbs apple cider vinegar
1 Tbs minced red onion
1 clove minced garlic
salt & pepper

Slice the pears and toss with the lime juice. Toss the spinach & arugula together in a bowl. Add a minimal amount of dressing, (just enough to coat the lettuce) and toss. Plate the lettuce and top each salad with the pears, pecans and crumbled blue cheese. Serve with more dressing on the side if desired.

  1. I love to entertain and spoil people… I love it most of all because I feel so blessed. If you feel like hosting, start small. I never have more than ten at a time for lunch.

  2. Pear and blue cheese are great ingredients for a summer salad, and with the addition of arugula and candied pecans sounds amazing, I’d add a few drops of aceto balsamico and that’s it! Nevertheless yummy!
