This salad is divine! Made almost out of desperation… On Wednesdays my hubby usually has lunch with his business partner and I fully anticipated that, until I got his text while I was on the incline trainer… “Lunch with my princess today”… (the best man ever!)… I had not planned on lunch. While I jumped off the trainer and Hubby jumped on, I went to work on figuring out lunch. With what I had on hand I made this accidental amazing salad! Really delicious!
Smoked Salmon & Roasted Mushroom Salad
2 cups arugula
2 cups baby spinach
4 oz smoked salmon
1/2 sweet onion diced
2 Tbs French Fried Onion Rings
2 cups Cremini mushrooms
Lemon Vinaigrette
Any good vinaigrette can be used, I just had this one already made. Lemons and salmon go so well together.
Preheat the oven to 475°F. Slice the mushrooms in half. Place them face down in a slightly oiled skillet and roast them in the oven for 20 minutes. Toss the greens, slice the sweet onions and shred the salmon. When the mushrooms are done toss everything together with the dressing. Heaven!!! If I had time for nuts I might have added them too!

What a fun combo of ingredients! Funny I usually think of smoked salmon around the Christmas holidays, but wow does it look good in this salad!
