This salad is divine! Made almost out of desperation… On Wednesdays my hubby usually has lunch with his business partner and I fully anticipated that, until I got his text while I was on the incline trainer… “Lunch with my princess today”… (the best man ever!)… I had not planned on lunch. If you have a Wegmans in your area you’ve seen a version of this salad before. I’m not a fan of store bought dressings, I love to make my own. When recipes call for a brand of dressing I go off the grid.  I also believe that every recipe can be made even better. Well, I took the idea of blueberries and cucumbers from a picture and made it my own! It was a huge hit with my family and a real winner in my book!
