I Love, Love, Love this salad!!! Kale has never been so good! It has the perfect amount of crunchy to creamy…sweet to tart! Unlike other salads you want to dress the kale early so it softens a little. You’ll crave this baby if you make it…
Creamy Crunchy Kale Salad
1 bunch kale stalks removed
1/2 red onion diced small
1 cup cranberries
1/2 cup toasted pumpkin seeds
1/2 cup creamy goat cheese
White Balsamic Vinaigrette
2 small garlic cloves, minced
1 shallot, minced
1 tsp Dijon mustard
1/2 cup white balsamic vinegar
1 1/2 cups light olive oil
2 tsp kosher salt
1 tsp black pepper
Clean, dry and chop the kale. Make the White Balsamic Vinaigrette: in a large jar combine all the vinaigrette ingredients. Put a lid on the jar and shake vigorously. In a large bowl lightly dress the kale allowing it to sit for about 15 minutes. Plate the salad; add the onion, goat cheese, cranberries and pumpkin seeds. Serve with more dressing on the side…Delicious!
