What an easy, quick and delicious lunch! The freshness of the arugula, the tenderness of the beef and the creaminess of the horseradish mayonnaise just made the perfect fit. This would be a great appetizer for the holidays. The beef can be served room temperature and is so easy to assemble. Yum! Filet Mignon Canape With Horseradish Mayonnaise
2-4 oz filet mignon cooked to rare… How to make a perfect steak
6 slices of baguette bread cut on the bias
1/2 cup mayonnaise
1 Tbs horseradish
1 cup arugula
2 Tbs vinaigrette
1/4 cup blue cheese
salt & pepper
Heat your skillet to hot then add a little butter or desired fat. Sear your beef to desired wellness, (follow the tip in the link above). When done, set the beef aside.Toast the bread, mix the mayonnaise, horseradish with a pinch of salt & pepper and set aside. Dress the arugula in the dressing and set aside. Lay out the bread, spread on the mayonnaise mixture. Slice the beef thin and layer on the toast. Top with arugula salad and a sprinkle of blue cheese and freshly ground pepper. Delicious!
