Chicken & Grape Skewers With White Balsamic Marinade
1 Lb chicken thighs, boneless skinless
1 Lb white or red seedless grapes
4 scallions cut 1/2 inch, save greens for garnish
1/2 cup White Balsamic Vinaigrette
salt & pepper
White Balsamic Vinaigrette
2 small garlic cloves, minced
1 shallot, minced
1 tsp Dijon mustard
1/2 white balsamic vinegar
1 1/2 cups light olive oil
2 tsp kosher salt
1 tsp black pepper
If you have a cast iron grill pan that can go on the grill go ahead and use it, but you don’t have to. Marinate the chicken in 1/2 cup White Balsamic Vinaigrette for about 2 to 3 hours. Skewer the chicken, grapes and scallions on metal skewers (if you use bamboo skewers soak in water for the amount of time you marinade the chicken). Heat up your grill and cook the skewers for about 10 minutes, turning occasionally. Delicious!

I will say that I think purple grapes would have looked better. Just saying… but sometimes you use what you have!
