Pesto Chicken & Quinoa Salad

This is a tasty meal that used to be on Brio Restaurant’s menu…I’ve made some adjustments – roasting the asparagus, chickpeas and tomatoes and nixing the cucumbers…I also marinate the chicken in the pesto before cooking it in a cast iron skillet. Today I’m revisiting one of my favorite summer platters – this one is perfect to serve at your next barbecue…Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation. Continue reading

Southwest Chicken Chopped Salad

Recently when visiting Washington DC we stopped for lunch at the Sculpture Garden Pavilion Cafe at the National Gallery of Art. On the menu was a Southwest Chicken Salad that not only looked good but tasted delish! I wanted to go back there the next day since I couldn’t stop thinking about it…but alas…we ended up at Hill Country BBQ – another great place to eat if you’re a big fan of brisket & ribs. But I couldn’t get that salad off my mind…so of course I had to make it at home. It turned out fabulous! The combination of flavors was just perfect…perfectly grilled southwestern-spiced chicken, fresh avocado, charred corn, black beans, crispy shallots, cotija cheese all piled on fresh salad greens and drizzled with chipotle-ranch dressing and bbq sauce…oh my!
