Welcome to a New Year! Let’s hope that 2021 is a good one…I was going to make my Southwest Chicken Chopped Salad the other day and one of my sons wasn’t in the ‘salad’ mood so I turned it into a Taco Night… I love the flavor combination of the chipotle ranch sauce mixed with the barbecue sauce…¡oh Dios mío! Delicioso! Continue reading

Pesto Chicken & Quinoa Salad
This is a tasty meal that used to be on Brio Restaurant’s menu…I’ve made some adjustments – roasting the asparagus, chickpeas and tomatoes and nixing the cucumbers…I also marinate the chicken in the pesto before cooking it in a cast iron skillet. Toss it with a creamy herb dressing or any salad dressing of your choice. It can be served as a salad or in a bowl… Continue reading
Savory Chicken Pie: Revisited
Heidi and I are headed into New York City today to do some shopping and sightseeing…we’re meeting up with my hubby, who works on Madison Avenue, for dinner along with my cousin Dan and his new wife Nisrine…We’ll be eating Greek tonight…my favorite! Anyway, I left a Savory Chicken Pie for the boys to enjoy while we’re away – and decided to revisit my Savory Chicken Pie recipe from way back when we started the blog in 2015…have a wonderful day all! 🙂 Continue reading
Mediterranean Hummus Platter: Revisited

Today I’m revisiting one of my favorite summer platters – this one is perfect to serve at your next barbecue…Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation. Continue reading
Lemon Dill Chicken Salad With Grilled Lemons

This chicken salad is very refreshing. The lemon is double good with the fresh squeezed lemon in the chicken with the dill, and then the sweet grilled lemon squeeze for the final bite. Great for a tea party or like me, lunch with my Hubby. Continue reading
Chicken Chili

I love a hearty chili with black beans and this chili is no exception. Especially on a chilly spring day like today…If you want an easy healthy chili that satisfies and comforts you…give this one a try, I promise it will not disappoint. Continue reading
Tequila Lime Chicken
This dish is so good and so easy – the hardest part is having to wait for the chicken to marinade. I like to wrap them up in some tortillas with a good salsa and a little lettuce. Simple, healthy and delicious! Continue reading
Chicken Tortilla Soup

Last week when I made the Southwest Chicken Salad I had leftover ingredients so I decided to use them to make a Chicken Tortilla Soup…it turned out delicious…I love when that happens! Homemade soups are just perfect to serve on cold winter days. They warm you up quick and are so healthy! Continue reading
Southwest Chicken Chopped Salad

Recently when visiting Washington DC we stopped for lunch at the Sculpture Garden Pavilion Cafe at the National Gallery of Art. On the menu was a Southwest Chicken Salad that not only looked good but tasted delish! I wanted to go back there the next day since I couldn’t stop thinking about it…but alas…we ended up at Hill Country BBQ – another great place to eat if you’re a big fan of brisket & ribs. But I couldn’t get that salad off my mind…so of course I had to make it at home. It turned out fabulous! The combination of flavors was just perfect…perfectly grilled southwestern-spiced chicken, fresh avocado, charred corn, black beans, crispy shallots, cotija cheese all piled on fresh salad greens and drizzled with chipotle-ranch dressing and bbq sauce…oh my! I will absolutely be making this salad again and again… Continue reading
