I love a hearty chili with black beans and this chili is no exception. Especially on a chilly spring day like today…If you want an easy healthy chili that satisfies and comforts you…give this one a try, I promise it will not disappoint.
2 chicken breasts
1 Tbs Olive Oil
28 oz can diced tomatoes rinsed and drained
2 15.5 cans black beans rinsed and drained
2 cups chicken or beef broth
1 cup diced onions
1 Tbs cumin
1 Tbs smoked paprika
1 tsp celery salt
Dice the chicken into small pieces. Heat the oil in a pot and add the chicken. Cook for a few minutes until the chicken begins to brown. Add the diced onions and continue cooking until the onions become soft. Next add the tomatoes, beans, cumin, smoked paprika, celery salt and broth. Cook on medium for 30 minutes and serve when ready. Delicious!
