I made this sandwich originally with leftovers and my Hubby just loved it, so now I make it on purpose for him sometimes at our daily lunch date. The pork loin is tender and lean and the roasted red peppers give a sweetness while the dijon and arugula give it a nice bite. I just love happy accidents… Continue reading

Mushroom, Onion & Swiss Panini

Panini sandwiches are excellent to have with soup. Great for dipping the crusty smooshed delight. I love to make mine with my favorite fungus…Portobello mushroom…you don’t even miss the meat! Continue reading
Ahi Tuna Lettuce Wraps With Sesame, Ginger Mayonnaise And Crispy Onions

This time of year is the best for lettuce from the garden. Our new favorite to grow is Boston Bib or Big Boston from our heirloom seed collection. We buy almost all of our seeds from Bakers Creek because we know they are committed to saving heirloom seeds from all over the world….I highly recommend checking them out at rareseeds.com. Today’s lunch of lightly seared tuna with an awesome Asian inspired mayonnaise was delicious! And the little crunch from the crispy onions (also from the garden) was perfect!

Cuban Sandwich

On Tuesday I shared a fabulous Cuban Mojo Pork Roast inspired by my husband’s recent trip to Florida – with the intention of making today’s Cuban Sandwiches with the leftovers. I first had a Cuban Sandwich about thirty years ago in Panama at Niko’s Cafe. Since then they’ve been a favorite of mine – but I hadn’t made them in my own kitchen until now. Citrus-marinated pork, thick slices of Tavern Ham, Swiss cheese & Dill pickles pressed between two slices of rustic bread that’s been slathered with Roasted Garlic, Peppercorn & Cilantro Aioli & a dollop of Dijon. Grilled to perfection. Now that’s a sandwich! Continue reading
Smoked Turkey & Pear Grilled Cheese On Multi Grain Bread

I was in the mood for grilled cheese and I had a bowl full of pears, so I just decided…Why Not?! Wow… what a tasty lunch. My hubby and I really enjoyed this savory sandwich with a little bit of sweet. The grainy bread gave it the perfect bite of nutty too. Continue reading
Slow Roasted Brisket

This is one of those meals that is perfect for the upcoming cold weekend. All the ingredients were placed in the Slow Cooker in the evening before we went to bed. It slow-cooked all night and we made some delicious sandwiches for lunch. The brisket was so flavorful and tender!

Grilled Smoked Gouda & Prosciutto With Roasted Garlic, Tomato & Onions

Sometimes a grilled cheese tastes like the best tasting sandwich in the whole world. As a little girl in kindergarten back when kindergarten was 1/2 a day, I would come home and want a grilled cheese sandwich (American cheese) and tomato soup (Campbell’s). Although I wouldn’t pass on this American delight still, I think my pallet has heightened a little. I’ve said it before in a post last year… Wow! Last year? It was when I shared my Creamy Roasted Tomato & Garlic Soup with Grilled Cheese on Rosemary Garlic Bread….Well, today I decided to incorporate the roasted tomato into the sandwich with a smoked Gouda… Continue reading
Meatball Sliders

Ok, ok… I know this might seem a bit parochial, but I think it’s a real time saver for the holidays. Meatball Sliders! My mother always fried her meatballs before she put them in the sauce, but I don’t. I put them into the sauce raw and let them flavor the sauce. Take note, I don’t use a fatty meat. I use a lean beef. Anyway, if you’re like me and have lots of visitors over the holidays…this is a quick and simple dish to have around. Who doesn’t like a meatball sub?! The perfect bite for you or your guests… Continue reading
Creamy Pumpkin Soup

This is the time of year when soup is just what the doctor ordered. This is a great soup to serve on Thanksgiving or just on a chilly Tuesday… Continue reading
