Broccoli Flatbread Pizza

Here’s a healthy lunch even your kids will love…yummy roasted broccoli & red onion with just a touch of garlic and some freshly shredded Parmesan…Quick and easy!

Broccoli Flatbread Pizza
2 heads broccoli
extra virgin olive oil
salt & fresh ground pepper
1 small red onion, sliced
2 large unpeeled garlic cloves
1/2 cup freshly shredded Parmesan
2 flatbread

Heat oven to 425°F. Cut broccoli into small florets. Place in a bowl and drizzle with extra virgin olive oil and season with salt & fresh ground pepper. Place on half of an aluminum-foiled lined baking sheet. Place red onion slices on remaining other half of baking sheet. Brush with extra virgin olive oil and season with salt & fresh ground pepper. Add the two unpeeled garlic cloves to the baking sheet. Roast in heated oven 20 minutes. Remove from oven. Brush flatbreads with extra virgin olive oil. Scatter the roasted broccoli florets and red onion slices on the flatbreads. Squeeze the roasted garlic onto each flatbread. Sprinkle with freshly shredded Parmesan. Place on a clean baking sheet and bake 5-7 minutes until cheese melts. Makes two servings.
