Grilled Vegetable Platter

This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! Sometimes I drizzle a balsamic glaze over the platter and it adds a bit a sweetness. Any way you make it it’s fabulous!

Grilled Vegetable Platter
eggplant slices
green pepper quarters
red onion slices
tomato quarters
lemon slices
red potato
sweet potato
extra virgin olive oil
salt & fresh ground pepper
shaved Parmesan
balsamic glaze (optional)
olives (optional)

Brush the eggplant slices, green pepper, red onion slices, tomato quarters & lemon slices with some extra virgin olive oil and sprinkle with salt and fresh ground pepper. Heat a grill pan on medium-high heat. Place the vegetables on the hot grill pan and grill each side about 5 minutes. Meanwhile pierce the potatoes and microwave three minutes; slice, then brush both sides of potato and sweet potato slices with some extra virgin olive oil, salt & pepper and place on the grill pan a few minutes on each side. Arrange grilled vegetables and potatoes on a platter. Top with shaved Parmesan and drizzle with balsamic glaze if desired.
