Our garden is still producing copious amounts of green peppers. I am literally overflowing with them. Stuffed pepper soup along with stuffed peppers, western omelets and green pepper salads have been on the menu. Trying to think of new ways to use them has become a daily challenge. Well yesterday I was also missing my grandmother and whenever I think of her I always think of my Classic Tuna Noodle Casserole… It was one of her favorites. So I decided to make it, but instead of a casserole, I would stuff the peppers with it. Turned out to be really good. I love when that happens! Stuffed Pepper Soup
It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. He never eats the rice so I just thought…peppers… rice… stuffed pepper soup! I used ground turkey because that’s what I had on hand. It turned out so good and my Hubby went wild for it! Grilled Vegetable Platter
This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! Swordfish & Pepper Kabobs
We recently purchased a small charcoal grill to test the difference between gas and charcoal. I’m really impressed with the flavor impact a charcoal grill makes on food…especially when using a hardwood charcoal such as Cowboy brand (can be found at Lowes). I also bought Weber’s New Real Grilling Cookbook – and have made a few of the recipes. They’ve turned out so well (even with a little tweaking) that I would highly recommend this cookbook for anyone who loves to grill!
