It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. He never eats the rice so I just thought…peppers… rice… stuffed pepper soup! I used ground turkey because that’s what I had on hand. It turned out so good and my Hubby went wild for it!
Stuffed Pepper Soup
1 lb ground turkey
4 green peppers diced
1 cup tomato sauce
1 onion diced
6 cups beef stock
2 cups cooked rice
shredded Monterey Jack Cheese
1 tsp oregano
1 tsp onion powder
1 tsp garlic salt
1 Tbs olive oil
salt & pepper to taste
In a soup pot, brown the ground turkey. Add the onions and peppers and cook until they begin to soften. Next add the tomato sauce, beef stock, oregano, onion powder, garlic salt and rice. Continue cooking for another 20 minutes and serve hot with some cheese on top… Delicious!!!
