My Hubby loves mashed potatoes… He would eat them every day if I made them. Well instead of mashed potatoes this time I made very creamy polenta. Granted it takes a little longer to reach this perfect creamy consistency, but the flavor of the polenta is rich and delicious. Pair it with some seared scallops and you have greatness!
Creamy Polenta with Seared Scallops
1 cup dried Polenta
3 cups chicken stock
3 cups whole milk
1 cup water
1 cup grated Pecorino cheese
1 tsp garlic powder
3 Tbs butter
salt & pepper
6 – 8 large scallops
basil for garnish
In a sauce pot melt two tablespoons of butter. Add the polenta, garlic powder and salt & pepper along with the chicken stock and cook on medium-low heat for 30 minutes stirring frequently. Continue to add liquid about a half a cup at a time, milk first then finish with the water every 15 minutes or so until the polenta is creamy and has the consistency of mashed potatoes. This process does take time but it’s worth it. Now add the Pecorino cheese and stir until the cheese is incorporated throughout the polenta.
In a skillet heat the remaining two tablespoons of butter. Dry the scallops on a paper towel and season with salt & pepper. Sear the scallops about a minute on each side. Place the polenta in a shallow dish, top with scallops and garnish with fresh basil. Delicious!
