Grilled Vegetable Platter

This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! German Potato Salad

Every summer when we were little my parents took us up to ‘the house on the hill’ to visit family. The House on the Hill was the home of my grandmother on my father’s side. She was one of thirteen children! She and my grandfather lived in Philadelphia year-round but during the summer they would head up to her family home and we would all spend time with cousins and aunts and uncles. I have the fondest memories of those summers…the fun, the freedom, the food! Quite a few years ago I made my first venture oversees…to Sweden! It was a beautiful time of year – not yet cold enough for heavy winter coats – kind of like today’s weather here in NJ.
