Roasted Rosemary Red Potatoes

Here’s an easy to make side that can be served with any meal. It’s simple and delicious!  

Roasted Rosemary Red Potatoes
4-6 red potatoes, cut into bite-sized chunks
1-2 tablespoon extra virgin olive oil
1 teaspoon salt
fresh ground pepper
1-2 tablespoons fresh chopped rosemary (depends on your preference of rosemary strength!)

Heat oven to 400 °F. Place the potato chunks in a large bowl. Drizzle with olive oil, sprinkle with salt, pepper & rosemary. Toss to coat the potatoes. Spray a baking sheet with cooking spray and spread potatoes in a single layer. Bake 30 minutes until potatoes are tender.

Remove from oven and serve with your dinner tonight!
