My Favorite Holiday Bites


Thanksgiving is over and we spent ours with some of our children. My daughter-in-law made dinner this year, so I was off the hook! It was a wonderful day and everything was delicious! The only thing was that I missed some of my favorite bites. I still had a turkey at home to cook and I had been dying to try a technique I had heard about to see if it worked. Since I was clear of the pressure to serve it to anyone but my Hubby and I, I decided to go for it on Sunday. To my happy surprise it worked perfectly and I will never make a turkey any other way again! I also made the two sides that I was missing from other Thanksgivings. The Cranberry & Apricot Chutney I cook at Thanksgiving but use it for many Holiday dishes all the way to Christmas and as a gift to Hostesses when I attend parties. It’s great on Brie too! While we are all being ‘Alone Together’, I find I am really missing some of my favorite restaurants and foods they made. One of the things I miss is sweet potato fries. While I don’t fry at home, I decided to make them my healthy baked way. Coating the fries in egg whites gives them the crunchy outside without the fat. My son brought home an enormous sweet potato and it just sat there, waiting for me to make something with it…I kept looking at it in the basket, taking up so much space, but couldn’t figure out what I wanted to do with it…in the meantime, I’m always getting emails from Williams-Sonoma – I really like that store and enjoy browsing through their website – and so one day I clicked on their recipe finder and typed in sweet potato…up popped this recipe that looked pretty good to me…I had all the ingredients at home and decided to make it for a side dish to my Lemon-Garlic Chicken Thighs. Grilled Vegetable Platter

This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! I always serve quiche on Christmas morning. It is easy to prepare the egg mixtures the day before, then refrigerate until Christmas morning. When I wake up I put them in the crust and cook them until they are done. This year I wanted to add a new quiche to the standard spinach and bacon & cheese quiches I always make. As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese.
