I always serve quiche on Christmas morning. It is easy to prepare the egg mixtures the day before, then refrigerate until Christmas morning. When I wake up I put them in the crust and cook them until they are done. This year I wanted to add a new quiche to the standard spinach and bacon & cheese quiches I always make. So, I decided to try sweet potatoes…Wow, what a hit!
Sweet Potato & Onion Quiche
1 frozen pie crust
1 1/2 cups diced cooked sweet potatoes
1/2 a sweet onion diced and sautéed until tender
2/3 cup whipped cream cheese
3 eggs
3/4 cup heavy cream
salt & pepper to taste
Heat oven to 375°F. Mix all the ingredients together with a hand beater leaving it a little chunky with bits of sweet potato. Pour into your pie plate and bake 35-40 minutes until done. Delicious!!!

This looks FABULOUS! I need to try this. Keish on Christmas morning is my favorite! Then we eat the leftovers for the next couple too. SOOO good. And sweet potato & onion—– those are like my two of my favorites together. Thank you for sharing!!!! Hope your Christmas was PERFECT!

Christmas was very nice… It’s a lot of work, but it’s worth it to see everybody enjoy themselves.
