As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese. From that Thanksgiving and every year after it has become a new tradition. And they are so good that I have to make enough for everyone to take some home. Whipped Sweet Potato Delight
2 or 3 sweet potatoes pealed and cubed
6 Tbs butter
3/4 cup whipped cream cheese
1/2 tsp salt
1/4 tsp pepper
Boil the peeled, diced sweet potatoes in water until fork tender. Strain the sweet potatoes and mash or send through a Foley mill into a bowl that has 6 Tbs of butter cut up.
Next add the whipped cream cheese along with the salt and pepper. Whip until smooth!
I served these with the ham and apple chutney and the honey mustard au jus. So Delicious!!!

Its’ savory with the salt and butter, but as always those beautiful potatoes have the perfect sweet. They are so delicious!
