Shrimp Ravioli & Garlic Lemon Butter

I’ve been making these little gems for about a year now and we LOVE them!!! They are super easy to make and a punch of flavor… My Hubby calls them his new favorite dinner. He even asked for them for his birthday dinner!!! I wanted to have shrimp scampi but also had some wonton wrappers that I wanted to use and I’ve cheated using wonton wrappers for ravioli before…. so why not shrimp?!

Tomato Bisque With Crab Butter

Tomato Bisque With Crab Butter
Call me crazy, but my idea of a romantic evening involves sitting on the back porch with a huge amount of king crab legs spread out on newspaper, lots of butter, a bottle of wine and the sun setting! Well, that’s just what we did last night. You know the knuckle part at the crab that holds all the claws together? I save that part and clean it the next day to turn into another meal. Since I also have copious amounts of tomatoes – lunch was a no brainier… Continue reading

Dutch Pancake With Lemon Curd Butter & Peach Compote

Dutch Pancake With Lemon Curd Butter & Peach Compote
This was the perfect breakfast to surprise my Hubby with this morning. It’s an easy and impressive way to serve a treat to the ones you love. Dutch pancakes take a little time to prepare and can be served a thousand ways. Made to be savory or sweet, today I made it with a lemon curd butter and a peach compote my mom made. Instead of making one big one which is the norm, I made 4 individual ones in my 6″ little cast iron skillets. Drizzle with the curd butter, top with powdered sugar and put a little fruit compote on the side! Continue reading

The Cookie Jar: Walnut Butterballs

Walnut Butterballs
Years ago when we were young my mother would organize cookie making days during the Christmas season. She had a ton of wonderful cookie recipes that my sisters and I would make with her – it was so much fun! It’s been years since I’ve had to make more than a batch of cookies…but since I was recently invited to join in a Cookie Exchange Party I had the opportunity to make these delightful Christmas-time cookies that my mom used to make with us. What made it even more special is that I spent the day making these with my friend Kristin. Thank you Kristin for opening up your kitchen for a special day of cookie-baking! Continue reading

Baked Low Fat Fries With Sage Butter

Baked Low Fat Fries With Sage Butter
This is a great snack that I make this time of year because we are digging up our potatoes now. There is nothing like the taste of a fresh just-harvested potato! I seldom eat french fries because they just taste greasy most of the time. These fries are crispy on the outside and fluffy on the inside without the deep fry! Give them a try and you’ll see just what I’m talking about… Continue reading

Whipped Sweet Potato Delight

Whipped Sweet Potato Delight 1

As promised, here is my Whipped Sweet Potato Delight. It was born on Thanksgiving many years ago when I was a young mother and was asked to make the sweet potatoes for the meal that year. Since I didn’t ever like the marshmallow-brown sugar version, I decided to make them in a manner that I would want to eat them. Mashed with lots of butter and cream cheese. From that Thanksgiving and every year after it has become a new tradition. And they are so good that I have to make enough for everyone to take some home. If you never like sweet potatoes unless they are in chip form or baked, try these… Continue reading

Brown Sugar & Butter Sautéed Spaghetti Squash
Brown Sugar & Butter Sautéed Spaghetti Squash

Remember when Heidi gave me all of those beautiful vegetables from her garden? Well, I’ve just used up the final two veggies! Spaghetti Squash…mmm – I had to think about how I could use them – what would be something different that everyone would like? You know how hard it is to get everyone to eat their vegetables! I added just a touch of sweetness to the roasted Spaghetti Squash and it was a real winner…Kids will love this one and they won’t even know it’s a vegetable… Continue reading
