Penne with Eggplant & Tomato Sauce

I am cooking a lot more vegetarian dishes than ever before…and loving it! With a growing family, we have so many different dietary requirements and desires. Don’t get me wrong, we still love grilling steaks and barbecuing chicken – but we are developing a new palate in our house. There are so many more flavors out there that we just never considered…like this delicious pasta that I made from the leftover Eggplant & Tomato Soup…so, so good… Continue reading

Pesto Chicken & Quinoa Salad

This is a tasty meal that used to be on Brio Restaurant’s menu…I’ve made some adjustments – roasting the asparagus, chickpeas and tomatoes and nixing the cucumbers…I also marinate the chicken in the pesto before cooking it in a cast iron skillet. Toss it with a creamy herb dressing or any salad dressing of your choice. It can be served as a salad or in a bowl… Continue reading

Grilled Veggie Grain Bowl

I’ve been trying to serve more Meatless Meals lately…especially since reading an article about preventing Alzheimers. The article listed five main changes to make to your life that could possibly help…the first was exercise (done), the second was coffee, 70% chocolate, red wine (done, done and done), the third was sleep (working on it), the fourth was learning something new (again, working on it) and the last change to make was a more vegetable-based diet. After sharing the article with my family we all decided to incorporate these changes in our lives. Adding more vegetables is such an easy change and since I’m the main cook in the house it falls on me to try and make these Meatless Meals more tasty and original…I’ve already shared quite a few in the past so bear with me as I keep on experimenting! Grilled Vegetable Platter

This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! Sometimes I drizzle a balsamic glaze over the platter and it adds a bit a sweetness. Any way you make it it’s fabulous! Continue reading

Tomato Bisque With Crab Butter

Tomato Bisque With Crab Butter
Call me crazy, but my idea of a romantic evening involves sitting on the back porch with a huge amount of king crab legs spread out on newspaper, lots of butter, a bottle of wine and the sun setting! Well, that’s just what we did last night. You know the knuckle part at the crab that holds all the claws together? I save that part and clean it the next day to turn into another meal. Since I also have copious amounts of tomatoes – lunch was a no brainier… Continue reading

Taverna Greek Salad

We have a wonderful Greek restaurant in our area that serves truly delicious food…Estia Taverna in Marlton is a restaurant I would highly recommend to anyone who asked…they have a Greek Salad on the menu that is made of the simplest ingredients…ripe tomatoes, sliced green peppers & cucumbers, thinly sliced red onions, marinated green & black olives and fresh feta…all combined in a simple vinaigrette…boy does it pack a powerful flavor punch…Summer is the perfect time to pick up these same ingredients at your local farmer’s market and make it fresh in your own kitchen…here’s how… Continue reading
