This salad is deceiving….not the prettiest side dish but it’s very tasty…I generally serve it with my Grilled Creole Chicken because the flavors compliment Cajun/Creole cuisine…
Black-Eyed Peas, Tomato & Mozzarella Salad
2 cans black-eyed peas, rinsed & drained
2 ripe plum tomatoes, diced
2 oz cubed deli ham
2 oz cubed deli pepperoni
2 oz cubed deli mozzarella cheese
1/4 cup extra virgin olive oil
3 tablespoons cider vinegar
1 tablespoon Spicy Mustard
1 tablespoon honey
1 teaspoon salt
fresh ground black pepper
Place the peas, diced tomatoes, ham, pepperoni & mozzarella cheese in a bowl. In a small jar with a lid, combine the extra virgin olive oil, cider vinegar, spicy mustard, honey, salt & fresh ground pepper to taste. Put the lid on the jar and shake vigorously. Pour over the salad and toss gently. Set aside for at least 10 minutes to allow the flavors to combine; tossing gently occasionally. Serves 4.

Brown ingredients may not be conducive to being “pretty” but it is the taste that matters and I think your black-eyed pea salad sounds terrific.
