We’ve frequented a local restaurant and this BLT was always on their menu…unfortunately the restaurant recently had a kitchen fire and hasn’t yet reopened – so I made it for my son who’s been craving a good old fashioned BLT…my twist on it was adding the Parmesan-Lemon Aioli which punched up the flavor!
Loaded Bacon Ciabatta BLT with Parmesan-Lemon Aioli
8 slices thick bacon
1 large ripe beefsteak tomato
a few Boston lettuce leaves
1/2 cup mayonnaise
1 lemon
1/4 cup freshly shredded Parmesan
fresh ground black pepper
2 ciabatta rolls, split
Cook the bacon until crisp. Slice the tomato and grill in a grill pan that has been sprayed with olive oil cooking spray until marks form on each side. In a small mixing bowl combine the mayonnaise, juice of the lemon, shredded Parmesan and fresh ground black pepper to taste. Toast the split ciabatta rolls. Assemble the sandwiches: Slather the Parmesan-Lemon Aioli on the toasted ciabatta rolls, layer four slices cooked bacon, half the lettuce and two grilled tomatoes for each sandwich. Dig in! Serves 2.
