These tasty Peach & Blue Cheese Bruschetta have become a new family favorite! With just a little prep time and a few minutes on the grill you’ve got a truly delicious appetizer to feed a small crowd.
Peach & Blue Cheese Bruschetta
6 oz Philadelphia brand cream cheese, softened
2 tablespoons sugar
1/2 teaspoon ground thyme
2-3 large ripe peaches
French or Italian bread loaf
extra virgin olive oil
salt
blue cheese crumbles
honey
Heat your grill to 450Β°F. In a small bowl using an electric mixter blend the cream cheese with the sugar and ground thyme. Cut the ripe peaches into slices (large enough to grill) and the bread into thick slices. Drizzle both sides of sliced peaches and sliced bread with olive oil. Season with salt. Grill peaches first – about 5 minutes total – turning occasionally. Next grill both sides of the bread slices – 1 to 2 minutes each side until lightly toasted but not burnt. Lay grilled bread on large platter. Slather each slice with the cream cheese mixture. Top with grilled peach slices and blue cheese crumbles. Drizzle with honey. Yummy Yummy!

Wow! A plate of yumminess. I normally have pears with blue cheese, but this looks delicious so with peaches being so in season, think I’ll give it a try.

Grill some pears and substitute the peaches if you prefer – either way this is a delicious appetizer (or dessert)! π
