This week Linda and I will be sharing two great salads to help you get healthy for summer! I love a good pasta salad – especially when entertaining – because it’s simple, inexpensive and goes a long way. The great thing about this salad is there is only a little pasta and a lot of rough greens but when you add them to the hot pasta, they soften a little and soak up the vinaigrette. You can add chicken and make it the main coarse. Any way you serve it – it’s a healthy addition to the menu!
Hearty Vegetable Pasta Salad
8 oz desired pasta cooked according to the box instructions
1/2 cup broccoli stems peeled and cut shredded
1/2 cup shredded cabbage
1/2 cup thinly sliced Brussels Sprouts
1/2 cup torn baby Kale
1/2 cup torn Chicory
1/2 cup dried cranberries
1/2 cup pumpkin seeds
1/2 cup diced sweet onions
1/2 cup vinaigrette
1/2 cup Provolone Cheese cut into little pieces
In a big bowl while the pasta is still hot after you drain it, add all the ingredients except the cheese and toss. Place covered in the refrigerator for 30 minutes. Right before serving add the cheese. Delicious!!!

Yes, we love Brussels sprouts! We grow them in our garden, but they are not harvested till November…
