Bacon, Egg & Cheese Bake
8 slices Hickory Smoked Bacon
3/4 cup milk
2 tablespoons fresh snipped parsley
salt & fresh ground pepper
2 cups shredded mozzarella cheese
Heat oven to 400°F. Cook the bacon until crisp; crumble. Spray a pie plate or shallow casserole dish with cooking spray. Whisk the eggs with the milk & parsley; season with salt & pepper. Layer the crumbled bacon and shredded mozzarella cheese in the shallow casserole dish. Pour the whisked egg mixture over the bacon & mozzarella. Bake 22-25 minutes in heated oven. Remove from oven and allow to set for a few minutes before slicing. Serves 4. Dig in!
