Beer-Marinated Steak Fajitas

It’s Taco Tuesday! Time for some Beer-Marinated Steak Fajitas…served alongside charred colored peppers, fresh cilantro and tart lime…yum!

Beer-Marinated Steak Fajitas
1 lb boneless sirloin steak
1/2 tablespoon each salt, cumin, chili powder & garlic powder
1/2 cup Corona Extra cerveza (beer)
1 red bell pepper
1 green pepper
1 orange pepper
1 yellow pepper
handful fresh cilantro
fresh cut limes
4-6 flour tortillas

Lay steak in a shallow dish. In a small jar with a lid, combine the salt, cumin, chili powder & garlic powder; put the lid on and shake vigorously. Season both sides of the steak with the mixture. Pour the beer on the steak and lift slightly so that beer can gravitate under the steak; set aside for a minimum of 20 minutes. Wash and dry the peppers. Slice into bite-sized strips. Heat a grill or grill pan on medium-high heat. Spray with cooking spray and grill the sliced peppers until nicely charred; set aside. Grill the steak to desired doneness. Heat the tortillas. To serve: layer the Beer-Marinated Steak slices on the tortillas; top with sliced peppers, cilantro and a squeeze of lime. Serve hot. Makes 4 servings.
